Preparing the Fries

    Cut the Potatoes

    Wash and peel the russet potatoes. Cut them into thick strips (about 1/4 inch thick) to form fries.

    Soak the Fries

    Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch.

    Dry and Fry the Potatoes

    After soaking, drain the fries and pat them dry with a clean towel. Heat vegetable oil in a deep fryer or a large pot to 350°F (175°C). Fry the potatoes in batches until golden brown, about 5-7 minutes. Remove and drain on paper towels. Season with salt to taste.

    Mix Ingredients

    In a bowl, combine mayonnaise, chopped pickles, capers, lemon juice, and fresh dill. Stir well until fully mixed. Adjust seasoning if needed. Refrigerate until ready to serve.

    In a mixing bowl, whisk together all-purpose flour, baking powder, and salt. Then gradually add cold sparkling water until the batter is smooth and cohesive.

    In a deep frying pan or pot, heat the vegetable oil to 350°F (175°C).

    Fry the Fish

    Dip each fish fillet into the batter, allowing excess batter to drip off. Carefully place the battered fish into the hot oil, frying in batches. Cook for about 4-5 minutes per side or until golden brown and crispy. Remove and drain on paper towels.
