Marinara Sauce

Preparing the Marinara Sauce

Sauté Garlic
Add the minced garlic and sauté for about 1 minute, until fragrant.

Add Tomatoes and Seasonings
Stir in the crushed tomatoes, dried oregano, salt, black pepper, and sugar. Bring to a simmer.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally.

Finish the Sauce
Add the chopped fresh basil just before serving. Adjust seasoning if needed.
Preparing the Calamari

Clean the Calamari
If not pre-cleaned, clean the calamari by removing the head, innards, and skin. Cut the body into rings.

Prepare the Breading
In a bowl, whisk together the all-purpose flour, cornstarch, salt, black pepper, and paprika.

Prepare the Buttermilk Mixture
In another bowl, beat the egg and combine it with the buttermilk.

Heat the Oil for Frying
In a deep pot or fryer, heat the vegetable oil to 375°F (190°C).

Coat the Calamari
Dip each calamari ring into the buttermilk mixture, then dredge it in the flour mixture, ensuring an even coat.

Fry the Calamari
Carefully drop the coated calamari rings into the hot oil in batches, frying for 2-3 minutes until golden brown.

Drain and Serve
Remove the fried calamari and drain on paper towels. Serve hot with the marinara sauce.
