Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with cocoa powder.

  2. 2

    Melt the Chocolate

In a microwave-safe bowl, combine the semi-sweet chocolate and unsalted butter. Heat in the microwave in 30-second intervals, stirring in between, until melted and smooth.

Mixing the Batter

  1. 3

    Combine Dry Ingredients

In a separate bowl, whisk together the all-purpose flour, granulated sugar, unsweetened cocoa powder, baking powder, and a pinch of salt.

  2. 4

    Combine Wet Ingredients

In another bowl, beat the eggs with the vanilla extract until well combined.

  3. 5

    Mix Everything Together

Pour the melted chocolate mixture into the egg mixture and stir to combine. Gradually add the dry ingredients to the wet mixture, folding gently until just combined.

Baking

  1. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 2/3 full.

  2. 7

    Bake

Bake in the preheated oven for 12-14 minutes, or until the edges are set but the center is still soft and slightly jiggly.

Serving

  1. 8

    Cool and Serve

Remove from the oven and let the cakes cool in the ramekins for 1 minute. Carefully invert onto plates and serve immediately with a scoop of vanilla ice cream on the side.
