Calamari Preparation

    Clean the Squid

    Rinse the fresh squid under cold water. Remove the head and innards, then slice the body into rings about 1/2 inch thick.

    Make the Batter

    In a bowl, combine all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. In another bowl, whisk together eggs and milk until well combined.

    Coat the Squid

    Dip each squid ring first into the egg mixture, then into the flour mixture, ensuring they are fully coated.

    Heat the Oil

    In a deep frying pan, heat vegetable oil over medium-high heat until it reaches 375°F (190°C).

    Fry the Calamari

    Carefully add the coated squid rings to the hot oil in batches, frying for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Marinara Sauce Preparation

    Sauté the Garlic

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

    Add Tomatoes and Seasoning

    Stir in the crushed tomatoes, oregano, salt, and black pepper. Bring to a simmer.

    Simmer the Sauce

    Reduce heat and let the sauce simmer for about 15-20 minutes, stirring occasionally.

    Finish the Sauce

    Stir in the chopped fresh basil and adjust seasoning if needed. Remove from heat.
