Prepare the Mozzarella Sandwich
Slice the mozzarella cheese into 1 cm thick slices. Place a slice of mozzarella between two slices of bread to make a sandwich.

Fry the Sandwich
In a large frying pan, heat the olive oil over medium heat. Once hot, carefully add the breaded sandwiches and fry until golden brown on both sides, about 3-4 minutes per side. Remove and drain on paper towels.

Make the Tomato Soup
In a large pot, heat a tablespoon of olive oil over medium heat. Add chopped onion and minced garlic; sauté until the onion is translucent. Add chopped tomatoes, vegetable broth, sugar, salt, and pepper. Bring to a simmer and cook for about 20 minutes.

Blend the Soup
Once cooked, use an immersion blender to puree the soup until smooth. Add fresh basil leaves and blend again briefly. Adjust seasoning if necessary.

Serve
In a bowl, ladle the tomato soup and serve with the fried mozzarella sandwiches on the side. Garnish the soup with chopped chives and grated Parmesan cheese.
