    Prepare the Genoise Cake

    Start by making the genoise cake. Preheat your oven to 350°F (175°C). Grease and flour a round cake pan.

    Mix the Eggs and Sugar

    In a mixing bowl, whisk the eggs and granulated sugar together until the mixture is pale and fluffy, about 10 minutes using an electric mixer.

    Bake the Cake

    Gently fold in the flour and a pinch of salt into the egg mixture. Pour the batter into the prepared cake pan and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let it cool completely.

    Prepare the Coffee Mixture

    While the cake is cooling, brew a strong cup of coffee and let it cool. Once cool, mix in the rum and marsala wine.

    Make the Mascarpone Filling

    In a separate bowl, combine the mascarpone cheese, vanilla extract, and a pinch of salt. Mix until smooth and creamy.

    Assemble the Tiramisù

    Once the genoise cake has cooled, cut it into two layers. Dip each layer quickly in the coffee mixture, making sure not to soak them. Place one layer in a serving dish.

    Layer the Ingredients

    Spread half of the mascarpone mixture over the first layer of the cake. Place the second layer of cake on top and repeat the process, adding the remaining mascarpone mixture.

    Chill and Serve

    Cover the tiramisù with plastic wrap and chill in the refrigerator for at least 4 hours, preferably overnight. Before serving, dust the top with cocoa powder.
