Prepare the Olive Oil-Washed Vodka

In a medium bowl, combine 1 cup of olive oil with 2 cups of vodka. Stir gently to mix.

Infuse the Vodka

Cover the bowl with plastic wrap and let it sit at room temperature for about 24 hours to allow the flavors to infuse.

Strain the Mixture

After 24 hours, pour the mixture through a fine mesh strainer or cheesecloth into a clean container to separate the oil from the vodka. Discard the oil.

Prepare the Fresh Herbs

Chop the fresh herbs finely and add them to the infused vodka, letting them steep for about 30 minutes.

Prepare the Fennel

Thinly slice the fresh fennel bulb and set aside for garnish.

Mix the Martini

In a cocktail shaker, combine 2 ounces of the olive oil-washed vodka, 1 ounce of fennel dry vermouth, and 2 cups of ice cubes. Shake vigorously for about 15 seconds.

Strain and Serve

Strain the mixture into a chilled martini glass. Garnish with sliced fennel, olives, and a lemon twist.
