- 1
Prepare the Chicken
Preheat the oven to 425°F (220°C). Pat the whole chicken dry with paper towels.
- 2
In a small bowl, mix olive oil, salt, black pepper, and paprika. Rub this mixture all over the chicken, making sure to get under the skin for maximum flavor.
- 3
Place the chicken breast side up in a roasting pan. Optionally, you can add a few garlic cloves and onion quarters inside the cavity of the chicken for added flavor.
- 4
Roast the Chicken
Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
- 5
Baste the chicken with its juices halfway through cooking for extra moisture and flavor.
- 6
Prepare the Cabbage
While the chicken is roasting, slice the purple cabbage into wedges.
- 7
Toss the cabbage with a little olive oil, salt, and pepper, and roast it in the oven for the last 30 minutes of the chicken's cooking time.
- 8
- 9
Add salt and any desired spicy elements (like chili flakes or hot sauce) to taste. Remove from heat and set aside.

Serve
Once the chicken is done, let it rest for 10-15 minutes before carving it in half.
