    Prepare the Ingredients

    Clean the wild mushrooms by wiping them with a damp cloth and slice them. Finely chop the onion and garlic.

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent, about 5 minutes.

    Cook the Mushrooms

    Add the sliced mushrooms to the pot and cook for about 10 minutes until they are softened and release their juices.

    Add Broth and Thyme

    Pour in the vegetable broth and add the fresh thyme. Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.

    Blend the Soup

    Using an immersion blender, puree the soup until smooth. If you prefer a chunkier texture, blend only part of the soup.

    Finish with Cream

    Stir in the heavy cream and season with salt and black pepper to taste. Heat through on low heat.

    Ladle the soup into bowls and serve with crusty bread rolls on the side.
