    Prepare the crust

    Preheat the oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a 9-inch springform pan to form the crust.

    Bake the crust

    Bake the crust in the preheated oven for 10 minutes. Remove from the oven and let it cool.

    Make the filling

    In a large mixing bowl, beat the cream cheese, granulated sugar, and salt until smooth and creamy. Add the sour cream and vanilla extract, mixing until well combined. Finally, add the eggs one at a time, mixing gently after each addition.

    Pour and bake

    Pour the cheesecake filling over the cooled crust. Bake in the oven at 325°F (160°C) for 50-60 minutes or until the center is set but still slightly jiggly.

    Cool and chill

    Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour. Then, refrigerate for at least 4 hours, or overnight if possible.

    Prepare the berry compote

    In a small saucepan, combine 2 cups of mixed berries, 1/4 cup of sugar, and 1 tablespoon of lemon juice. Cook over medium heat until the berries break down and the mixture thickens, about 10 minutes.

    Slice the cheesecake and top with the berry compote before serving.
