Muddle Ingredients

In a sturdy glass or cocktail shaker, add the diced fresh pineapple and fresh mint leaves. Use a muddler or the back of a spoon to gently press and muddle the ingredients together to release the juices and essential oils.

Add Liquids

Pour in the white rum, fresh lime juice, and simple syrup over the muddled pineapple and mint mixture. Stir gently to combine.

Add Ice

Fill the glass or shaker with ice cubes to the top, making sure to pack it well for a chilled drink.

Shake or Stir

If using a shaker, secure the lid and shake the mixture vigorously for about 10-15 seconds. If using a glass, stir the mixture well to combine all the ingredients.

Top with Club Soda

Strain the mixture into a tall glass filled with ice (if using a shaker) and top with club soda. Stir gently to combine.

Garnish your pineapple mojito with a lime wedge and a slice of fresh pineapple on the rim of the glass. Optionally, add a sprig of mint for extra flair.
