Preparation and Fermentation
Prepare the Sugar Water
In a large pot, bring 4 cups of water to a boil. Once boiling, remove from heat and stir in 1 cup of granulated sugar until fully dissolved.
Cool the Mixture
Allow the sugar water to cool to room temperature. This is important to ensure the yeast is not killed by high temperatures.
Add Yeast
Once cooled, sprinkle 1 tsp of yeast over the surface of the sugar water. Allow it to sit for 5 minutes to activate.
Fermentation
Stir the yeast into the mixture and cover with a cloth. Let it ferment at room temperature for 2-3 days, or until bubbling slows significantly. This indicates fermentation is complete.
Flavoring and Carbonation
Add Flavorings
After fermentation, add 1 cup of your choice of fresh fruit and 2 tbsp of natural flavoring. If using citric acid for extra tartness, add 1 tsp at this stage as well.
Mix
Gently stir the mixture to incorporate the fruit and flavors evenly.
Add Carbonated Water
Slowly add 2 cups of carbonated water to the mixture, stirring gently to maintain carbonation.
