Prepare the Breading Station
In three separate shallow bowls, set up a breading station. In the first bowl, add flour. In the second bowl, whisk together the eggs and milk until well combined. In the third bowl, mix breadcrumbs with cayenne pepper, paprika, salt, and black pepper.

Coat the Cheese Curds
Take a cheese curd, dip it in the flour, shaking off the excess. Then, dip it into the egg mixture, allowing any extra to drip off. Finally, coat the curd with the seasoned breadcrumbs, pressing gently to ensure the breadcrumbs adhere. Repeat this process for all cheese curds.

Heat the Oil
In a large, deep frying pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of bread into it; if it bubbles and browns quickly, the oil is ready.

Repeat
Continue frying the remaining cheese curds in batches until all are cooked. Ensure the oil temperature remains consistent between batches.
Serving

Prepare the Dipping Sauces
In small serving bowls, pour the cocktail sauce and the Thai sweet chili sauce.
