    Preheat and prepare crust

    Preheat oven to 475°F (245°C). If using a pizza stone, place it in the oven while preheating. Lightly oil a pizza pan or sheet, or dust a pizza peel with gluten-free flour. Brush the top of the gluten-free dough lightly with 1 tablespoon olive oil to help browning and prevent sogginess.

    Stretch or roll the gluten-free dough into a 12-inch round on a lightly oiled surface or parchment paper. Transfer the dough to the prepared pan or to the hot pizza stone using the peel or parchment.

Sauce & Cheese

    Sauce layer

    Spread 3 tablespoons of tomato pizza sauce evenly over the stretched dough, leaving a 1/2-inch rim for the crust.

    Cheese

    Sprinkle 2 cups shredded mozzarella evenly over the sauce. If using, sprinkle 2 teaspoons grated Parmesan over the top for extra savory flavor.

    Cook sausage

    In a small skillet over medium heat, cook the 6 oz crumbled Grazianos® Italian sausage until browned and cooked through, about 6–8 minutes. Drain excess fat on a paper towel-lined plate. Pat lightly to remove oil so the pizza doesn't get greasy.

    Arrange meats

    Distribute the cooked sausage evenly across the cheese. Arrange about 20 pepperoni slices on top, spacing them for full coverage while allowing some cheese to show.

Vegetables & Aromatics

    Prepare vegetables

    In the same skillet used for the sausage (wipe out excess oil if needed), sauté 3 oz sliced mushrooms with 1/2 tsp minced garlic over medium-high heat for 2–3 minutes until they release moisture and begin to brown. Remove from heat and let cool slightly.

    Scatter 1/2 cup chopped onion and 1/2 cup chopped green bell pepper evenly over the pizza, then add the sautéed mushrooms on top. The raw onion and pepper will roast on the pizza and retain some bite.

Finishing & Bake

    Season and bake

    Sprinkle 1/2 teaspoon dried oregano and, if desired, 1/4 teaspoon crushed red pepper flakes evenly over the assembled pizza. Slide the pizza (on pan or parchment) into the preheated oven on the stone or rack. Bake at 475°F (245°C) for 10–14 minutes, or until the crust edges are golden and cheese is bubbling and slightly browned. Baking time may vary with dough brand and oven—watch closely after 9 minutes.

    Rest and garnish

    Remove the pizza from the oven and let rest for 3–5 minutes to allow the cheese to set. Tear 4 fresh basil leaves and scatter over the pizza if using. Slice into 8 pieces and serve hot.
