Method
Dough & Assembly
- 1
preheat and prepare pan
Place a pizza stone or baking sheet in the oven and preheat to 475°F (245°C) for at least 30 minutes. If using a baking sheet, lightly oil it or line with parchment. Lightly dust a work surface with the GF flour.
- 2
shape dough
On the dusted surface, roll or press the gluten-free dough into a roughly 12-inch circle (or shape to fit your pan). Transfer dough to a piece of parchment paper for easier transfer to the hot stone/sheet. If dough is sticky, dust with small additional amounts of GF flour (up to 1–2 tbs).
- 3
Brush the outer 1/2-inch of the crust with 1 tablespoon olive oil to promote browning and crispness.
Sauce & Cheese
- 4
sauce
Spread 3 tablespoons of pizza sauce evenly over the dough, leaving the oiled 1/2-inch rim exposed.
- 5
cheese base
Evenly sprinkle 1 1/2 cups shredded mozzarella over the sauce, leaving some room for the toppings so the cheese melts through the meats.
- 6
parmesan
Lightly sprinkle 2 teaspoons grated Parmesan over the top for extra flavor (optional).
Meats (Meat Topping Mix)
- 7
prepare meats
Prepare each meat so it's ready to top: cook and crumble the Graziano's Italian sausage until browned (about 6–8 minutes) and drain excess fat; cook bacon until crisp, then chop into pieces; brown ground beef in a skillet, drain and season lightly with 1/8 tsp black pepper and 1/8 tsp salt. If using pre-cooked deli ham and pepperoni, they can be used as-is.
- 8
assemble meats on pizza
Arrange pepperoni slices evenly across the cheese layer (about 18–20 slices). Sprinkle the cooked crumbled sausage (1/2 cup), chopped bacon (from 4 slices), diced ham (1/2 cup), and cooked ground beef (1/2 cup) evenly over the pizza so each slice will have a mix of meats. Avoid overloading to ensure thorough cooking.
Finishing & Seasoning
- 9
season
Sprinkle 1 teaspoon dried oregano and 1/4 teaspoon crushed red pepper flakes (if using) evenly over the toppings. Taste for seasoning and, if desired, lightly sprinkle remaining 1/8 teaspoon salt across the pizza.
- 10
bake
Using a pizza peel or by lifting the parchment, transfer the assembled pizza to the preheated stone or baking sheet. Bake at 475°F (245°C) for 10–14 minutes, or until crust edges are golden and cheese is bubbling and beginning to brown. Baking time will vary by oven and dough type — start checking at 9 minutes.
- 11
rest and garnish
Remove pizza from oven and let rest on a cooling rack or cutting board for 3–5 minutes. Garnish with fresh basil leaves if desired, slice into 8 pieces, and serve hot.
