Cheese Blend

Method

Cheese Blend

  1. 1

Combine mozzarella, provolone, cheddar, Asiago, Parmesan, and Romano in a large bowl. Toss gently to evenly distribute the cheeses so each bite has a balanced mix.

  2. 2

Cover the bowl and refrigerate while preparing the crust so cheeses remain slightly firm and easier to handle.

Parmesan TastyCrust™

  1. 3

    Prepare crust seasoning

In a small bowl, whisk together the 0.5 cup grated Parmesan, garlic powder, Italian seasoning, kosher salt, and black pepper until evenly combined.

  2. 4

Brush the melted butter into the center of a shallow dish or small bowl. Reserve about 1 teaspoon of the butter mixture to finish the crust after baking.

  3. 5

Mix melted butter with the grated-Parmesan seasoning so the cheese is lightly moistened and tacky; this will help it adhere to the dough edge.

Assembly & Bake

  1. 6

Preheat oven to 475°F (245°C). If using a pizza stone, place it in the oven while preheating. If using a baking sheet, lightly dust with cornmeal or gluten-free flour.

  2. 7

On a lightly floured surface (use the 1/4 cup flour sparingly), stretch or roll the prepared gluten-free dough to a 12-inch round, leaving a slightly thicker 1-inch rim around the edge to form a crust.

  3. 8

If using pizza sauce, spread 1/2 cup of sauce over the dough leaving the 1-inch rim clear. For a white-style Cheese Pleaser, skip the sauce and leave the center bare so cheeses can melt directly on dough.

  4. 9

Evenly distribute the prepared cheese blend over the sauce or dough, spreading to within about 1/2 inch of the rim so cheese will not overflow excessively during baking.

  5. 10

Brush the exposed 1-inch rim of dough with olive oil, then press the Parmesan TastyCrust™ mixture (butter-Parmesan-seasoning) onto the rim, pressing gently so the mixture adheres and forms an even coating around the entire edge.

  6. 11

Transfer the pizza to a preheated pizza stone or baking sheet. Bake at 475°F (245°C) for 10–14 minutes, rotating halfway through, until the crust is golden, the Parmesan crust is lightly toasted, and cheeses are melted and bubbling.

  7. 12

For an extra browned top, switch the oven to broil for 30–60 seconds while watching closely to avoid burning.

  8. 13

Remove pizza from oven. Brush the reserved teaspoon of melted butter over the Parmesan crust for shine and extra flavor. Let rest for 2–3 minutes before slicing.

  9. 14

Slice into 6–8 pieces and serve hot.
