Brownie Batter

Preheat & prepare pan
Preheat oven to 350°F (175°C). Line a standard 24-count mini muffin tin (for brownie bites) with paper liners or grease thoroughly with nonstick spray/butter. Set aside.

Melt butter and chocolate
Place the chopped semisweet chocolate and unsalted butter in a heatproof bowl set over a small pot of gently simmering water (double boiler) or microwave in 20–30 second bursts, stirring between, until smooth and combined. Remove from heat and let cool 3–5 minutes.

Combine sugars and eggs
Whisk granulated sugar and brown sugar into the slightly cooled chocolate-butter mixture. Add the eggs one at a time, whisking vigorously after each until fully incorporated and the mixture is glossy. Whisk in the vanilla extract.

Add dry ingredients
Sift together the all-purpose flour, unsweetened cocoa powder, fine salt, and baking powder. Fold the dry mixture into the chocolate mixture with a spatula until just combined; do not overmix. The batter should be thick and fudgy.

Fold in mix-ins
Gently fold in the mini chocolate chips and chopped nuts, if using. Reserve a few extra mini chips for topping each brownie bite if desired.
Assemble & Bake

Spoon batter into prepared mini muffin cups, filling each about 3/4 full (use a small cookie scoop or teaspoon). Smooth tops slightly and sprinkle reserved mini chips and a tiny pinch of coarse sea salt on each, if using.

Bake in the preheated oven for 10–13 minutes. Begin checking at 9 minutes — brownie bites are done when edges are set and a toothpick inserted into the center comes out with a few moist crumbs (not wet batter).

Remove the pan from the oven and let the brownie bites cool in the tin for 5–7 minutes, then transfer to a wire rack to cool completely or serve warm. If you prefer fudgier bites, cool less; for firmer, cool fully.
Finish

Once cooled or slightly warm, dust with powdered sugar if desired and serve. Store leftover brownie bites in an airtight container at room temperature for up to 3 days or refrigerate for up to 7 days. Reheat briefly in microwave (5–8 seconds) to serve warm.
