Method
Crust

Prepare and preheat
Preheat oven to 475°F (245°C). If using a pizza stone, place it in the oven while preheating. If using a baking sheet, lightly oil it or line it with parchment.

Stretch or roll the gluten-free pizza dough on a lightly floured (gluten-free flour) surface into a 10–12 inch round. Transfer to a piece of parchment or a floured peel.

Brush the outer 1-inch edge of the crust lightly with 1 tablespoon olive oil. If using Sesame Seed TastyCrust™, sprinkle 1 teaspoon sesame seeds around the oiled edge, pressing gently so they adhere.

Add 6 oz ground beef to the skillet. Break it into small crumbles and cook 4–6 minutes until browned and no pink remains. Season with 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper while cooking.

Using a slotted spoon, drain any excess fat into a heatproof container. Taste and adjust seasoning as needed. Set the cooked beef mixture aside to cool slightly.

If bacon is not already cooked: cook 2 slices bacon in a skillet until crisp, about 6–8 minutes, turning once. Transfer to paper towels to drain and chop into bite-sized pieces. (Alternatively use pre-cooked bacon.)

Combine shredded mozzarella (1/2 cup), shredded provolone (1/4 cup) and shredded cheddar (1/4 cup) in a bowl and toss to mix evenly.

Lightly spread 1 tablespoon ketchup across the center of the stretched dough, leaving the oiled rim uncovered. Drizzle or dot 1 teaspoon mustard over the ketchup and, if using, place a few small dots (1 teaspoon total) of mayonnaise.

Evenly distribute the cooked ground beef over the sauced dough, leaving the rim clear for the crust.

Sprinkle the mixed cheeses evenly over the beef, covering to the edge of the sauced area. Scatter the chopped crisp bacon over the cheese.
Bake & Finish

Slide the pizza (on parchment or peel) onto the preheated pizza stone or place the baking sheet in the oven. Bake 10–12 minutes, rotating once if necessary, until the crust is golden and cheese is melted and bubbling. Baking time may vary with oven and thickness of dough—watch for a golden rim and fully melted cheese.

Remove pizza from oven and let rest 2 minutes. Top with 6 thin pickle slices and the 2 tablespoons thinly sliced fresh onion rings. If desired, sprinkle 1 teaspoon chopped parsley and 1/4 teaspoon crushed red pepper flakes.
