    Bring 4 cups water to a rolling boil in a large pot. Add 1 tablespoon kosher salt. Add 12 oz cavatelli and cook according to package instructions until al dente (usually 8–10 minutes). Reserve 1/2 cup of pasta cooking water, then drain pasta and set aside.

Grilled Chicken

    Prep and Grill

    While the water heats, pat 1 lb chicken breasts dry and trim any fat. Rub with 1 tablespoon olive oil, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp dried oregano, 3 tsp kosher salt, and 1 tsp black pepper. Let rest 5 minutes. Heat a grill pan or outdoor grill over medium-high heat until hot and lightly oiled. Grill chicken 5–7 minutes per side (depending on thickness) until internal temperature reaches 165°F (74°C). Transfer to a cutting board and let rest 5 minutes, then slice into 1/2-inch strips.

Alfredo Sauce

    Make the Base

    In a large skillet over medium heat, melt 4 tablespoons unsalted butter. Add 3 minced garlic cloves and sauté 30–45 seconds until fragrant but not browned.

    Thicken

    Sprinkle 2 teaspoons all-purpose flour over the butter-garlic and whisk for 30 seconds to cook the flour. Slowly pour in 1 cup whole milk while whisking to avoid lumps, then add 1 cup heavy cream and continue to whisk until combined.

    Simmer and Finish

    Bring sauce to a gentle simmer, stirring frequently, and cook 4–6 minutes until slightly thickened. Reduce heat to low and stir in 1 1/2 cups freshly grated Parmesan cheese until melted and smooth. Season with salt and black pepper to taste and add 1/8 tsp freshly grated nutmeg if using. If sauce is too thick, add up to 1/4 cup reserved pasta water, 1 tablespoon at a time, until desired consistency is reached.

Assemble & Serve

    Add the drained cavatelli to the skillet with the Alfredo sauce and toss gently to coat, adding reserved pasta water as needed to loosen. Fold in sliced grilled chicken and heat together 1–2 minutes until everything is hot.

    Finish

    Taste and adjust seasoning with salt and pepper. Divide into 4 servings. Garnish with 2 tablespoons chopped fresh parsley and 2 tablespoons extra grated Parmesan. Serve immediately.
