Prepare vegetables and herbs
Quarter the cherry tomatoes. Dice the green bell pepper into small pieces. Thinly slice the scallions. Chop the parsley and slice the basil. Rinse and gently pat the baby spinach dry; if leaves are large, roughly chop so they fold easily into the omelet.
Whisk eggs
Crack the eggs into a medium bowl. Add the milk or cream, salt, and black pepper. Whisk vigorously until homogenous and slightly frothy (about 15–30 seconds). Stir in the chopped parsley and basil to distribute the herbs in the egg mixture.
Cook vegetables
Add the cherry tomatoes and cook 1 minute more to warm them and release a little juice. Add the baby spinach and cook, stirring, until wilted (about 30–45 seconds). Season the vegetables lightly with a pinch of salt and pepper. Transfer the vegetables to a small bowl and set aside.
Cook omelet
Return the same skillet to medium-low heat and add 1 tbs unsalted butter (or 1 tbs olive oil). Swirl to coat and allow the butter to melt but not brown.
Pour the whisked eggs into the skillet and tilt the pan to evenly distribute. Let the eggs set undisturbed for 10–20 seconds, then gently pull the cooked edges toward the center with a rubber spatula, allowing uncooked egg to flow to the edges. Repeat this motion every 10–15 seconds until the eggs are mostly set but still slightly glossy on top (about 1–2 minutes total).
Spread the cooked vegetable mixture evenly over one half of the omelet. Sprinkle the cheese over the vegetables if using.
Use the spatula to fold the empty half of the omelet over the filling. Cook for another 20–30 seconds to warm the filling and melt the cheese, then slide the omelet onto a plate, seam-side down.
Finish & Serve
Garnish with microgreens or extra chopped herbs and an additional grind of black pepper to taste. Serve immediately with toast or a light salad.
Optional: For a fluffier omelet, cover the skillet with a lid for 20–30 seconds after folding to trap steam and finish cooking.
