Method
Mix dry ingredients
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until evenly combined.
Combine wet ingredients
In a separate bowl or a large measuring cup, whisk the milk and egg until blended. Add the melted butter and vanilla extract and whisk again until smooth.
Make the batter
Pour the wet ingredients into the dry ingredients. Using a spatula or wooden spoon, stir gently until just combined. A few small lumps are fine; do not overmix or the pancakes will be tough. Let the batter rest for 5 minutes to allow the baking powder to activate and the gluten to relax.
Cook pancakes
For each pancake, pour about 1/4 cup of batter onto the hot surface, leaving space between pancakes. Cook until bubbles form on the surface and the edges look set, about 2 to 3 minutes. Flip with a spatula and cook the second side until golden brown, about 1 to 2 minutes more. Adjust heat as necessary so pancakes brown without burning.
Transfer cooked pancakes to a plate and keep warm in a low oven (about 200°F / 95°C) while you cook the remaining batter. Re-grease the pan as needed between batches.
Serve
Stack pancakes, top with butter, maple syrup, fresh fruit, or other desired toppings, and serve immediately.
