Marinate

In a bowl, combine buttermilk and hot sauce. Add the trimmed chicken thighs, ensuring they are submerged. Cover and refrigerate for at least 1 hour, preferably 3–6 hours (or up to overnight) to tenderize and infuse flavor.

Prepare Dredge

In a large shallow bowl or rimmed baking sheet, whisk together all-purpose flour, cornstarch, smoked paprika, garlic powder, onion powder, salt, black pepper and cayenne (if using). Mix thoroughly so spices are evenly distributed.

Make Egg Wash

In a separate bowl, beat the eggs with 2 tablespoons water until combined. This will help the flour mixture adhere and build a crisp crust.

Double Dredge

Remove one marinated chicken piece at a time, letting excess buttermilk drip off. Dredge first in the seasoned flour, pressing firmly so it adheres. Dip into the egg wash, letting excess drip off, then press again into the flour mixture for a second coating. For extra crispness, repeat the egg wash and flour once more (optional). Place coated pieces on a wire rack and let rest 10–15 minutes to help the crust set.

Heat Oil

Pour vegetable oil into a deep skillet or Dutch oven to a depth of about 1 to 1.5 inches (enough to shallow-fry the chicken). Heat over medium-high to reach 350°F (175°C). If you don't have a thermometer, test with a small pinch of flour: it should sizzle immediately but not burn.

Fry Chicken

Fry chicken in batches without overcrowding, 3–4 minutes per side until golden brown and an instant-read thermometer inserted in the thickest part reads 165°F (74°C). Adjust heat to maintain oil temperature between 325–350°F (160–175°C). Transfer cooked pieces to a wire rack set over a baking sheet to drain; do not stack (keeps crust crispy). While still hot, sprinkle a light pinch of the extra salt and freshly ground black pepper over each piece.

Toast Buns

Split the buns and lightly butter the cut sides. Heat a skillet over medium heat and toast buttered sides until golden and fragrant, about 1–2 minutes. Set aside.

Prepare Sauce

In a small bowl, mix mayonnaise and yellow mustard until smooth. Taste and adjust seasoning if desired (salt/pepper).

Assemble Burgers

Place a toasted bottom bun on a plate. Spread about 1 to 1.5 tablespoons of the mayo-mustard sauce on the bun. Add a handful (~1/2 cup) of shredded lettuce, then a hot fried chicken piece. If using cheese, place the slice on the chicken immediately so residual heat slightly melts it. Top with 2 pickle slices and a tomato slice. Spread a tablespoon of sauce on the top bun and place it on the burger. Repeat for remaining burgers.

Serve

Serve immediately while the chicken is hot and crusty. Provide extra pickles and napkins. If desired, serve with fries or coleslaw.
