Fries

Truffle Oil and Parmesan

Assorted Sauces

Method

Preparing the Fries

  1. 1

    Cut the Potatoes

Wash and peel the russet potatoes. Cut them into thin strips to form fries.

  2. 2

    Soak the Fries

Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

  3. 3

    Dry the Fries

Drain the soaked fries and pat them dry with a clean kitchen towel to remove as much moisture as possible.

  4. 4

    Heat the Oil

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

  5. 5

    Fry the Potatoes

Carefully add the dried fries to the hot oil in batches. Fry until golden brown and crispy, about 5-7 minutes per batch.

  6. 6

    Drain and Salt

Remove the fries from the oil and drain on paper towels. While they are hot, sprinkle with salt.

Finishing Touches

  1. 7

    Add Truffle Oil and Parmesan

Once all fries are fried, place them in a large mixing bowl. Drizzle with truffle oil and sprinkle grated Parmesan cheese over the top. Toss gently to coat the fries evenly.

Serving

  1. 8

    Plate the Fries

Transfer the truffle Parmesan fries to a serving platter or individual plates.

  2. 9

    Serve with Sauces

Serve hot with garlic aioli, chipotle mayo, and ketchup on the side for dipping.
