Pat the steaks dry with paper towels. Generously season both sides with salt and black pepper.

In a bowl, combine softened unsalted butter, minced garlic, chopped parsley, lemon juice, and salt. Mix until well combined.

Transfer the mixture onto a piece of parchment paper. Roll it into a log shape and twist the ends to seal. Refrigerate until firm.

Peel and cut the russet potatoes into thin strips. Soak them in cold water for at least 30 minutes to remove excess starch.
