In a large bowl, combine the chicken wings, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper. Toss to coat the wings evenly. Pour in the buttermilk, and mix until the wings are fully submerged. Cover the bowl and marinate in the refrigerator for at least 2 hours or, ideally, overnight.

In a separate bowl, mix together the all-purpose flour and cornstarch. Season the mixture with a pinch of salt and pepper for additional flavor.

Heat the Oil
In a large, deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of the flour mixture into the oil; if it bubbles, it's ready.

Remove the wings from the buttermilk marinade, allowing any excess to drip off. Dredge each wing in the flour and cornstarch mixture until fully coated. Shake off any excess flour.

Carefully place the coated wings into the hot oil, working in batches to avoid overcrowding. Fry the wings for about 10-12 minutes, turning occasionally, until they are golden brown and crispy. The internal temperature should reach 165°F (74°C).
