Chicken Preparation

    Marinate the Chicken

    In a large bowl, combine chicken thighs and buttermilk. Cover and refrigerate for at least 1 hour or overnight for best results.

    Prepare the Frying Mixture

    In a separate bowl, mix together flour, salt, black pepper, and Nashville hot seasoning rub.

    Fry the Chicken

    Heat vegetable oil in a large skillet over medium-high heat. Remove the chicken from buttermilk, allowing excess to drip off, then dredge in the seasoned flour mixture. Fry the chicken for about 6-8 minutes on each side or until golden brown and cooked through. Remove from oil and drain on paper towels.

    Make the Biscuit Dough

    Preheat the oven to 450°F (230°C). In a large bowl, mix together flour, baking powder, and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in milk until just combined.

    Shape and Bake the Biscuits

    Turn the dough onto a floured surface and gently knead it a few times. Roll it out to about 1-inch thickness and cut out biscuits using a round cutter. Place on a baking sheet and bake for 12-15 minutes or until golden brown.

Potato Preparation

    Prepare the Potatoes

    Wash and dice the potatoes into bite-sized pieces. In a large bowl, toss the potatoes with olive oil, paprika, garlic powder, salt, and black pepper until evenly coated.

    Cook the Potatoes

    Spread the seasoned potatoes on a baking sheet and roast in the oven at 425°F (220°C) for about 25-30 minutes, or until crispy and golden, tossing halfway through.

Assembly

    To serve, place a fried chicken thigh on a biscuit and top with additional Nashville hot seasoning if desired. Serve with seasoned roasted potatoes on the side.
