Preparing the Cocktail

Coconut-washed Campari
Begin by preparing coconut-washed Campari. In a jar, combine 1 cup of Campari with 1 cup of melted coconut oil. Let it sit for 24 hours at room temperature, then chill in the refrigerator until the oil solidifies. Once solid, strain the mixture through a fine mesh sieve or cheesecloth to separate the coconut oil from the Campari.

Mixing the Ingredients
In a cocktail shaker, combine 2 oz of Nonic Rum, 1 oz of coconut-washed Campari, 1 oz of pineapple juice, and 0.5 oz of fresh lime juice.

Shaking
Add ice to the shaker and shake vigorously for about 15 seconds until well chilled.

Straining
Strain the mixture into a chilled glass, preferably a highball or rocks glass, filled with ice.

Garnishing
Garnish with a slice of fresh pineapple or a lime wheel for an extra touch.
