Fried Calamari

    Prepare the Calamari

    Rinse the calamari rings under cold water and pat them dry with paper towels.

    Make the Batter

    In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper. Mix well.

    Soak the Calamari

    Place the calamari rings in a separate bowl and pour the buttermilk over them. Allow them to soak for at least 15 minutes.

    Heat the Oil

    In a deep pot or fryer, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

    Coat the Calamari

    Remove the calamari rings from the buttermilk and allow excess liquid to drip off. Dredge them in the flour mixture, ensuring they are well coated.

    Fry the Calamari

    Carefully add the coated calamari rings to the hot oil in batches. Fry until they are golden brown and crispy, about 2-3 minutes per batch. Use a slotted spoon to remove them and place them on paper towels to drain excess oil.

Marinara Sauce

    Sauté Garlic

    In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

    Add Tomatoes and Seasoning

    Stir in the canned crushed tomatoes, dried oregano, dried basil, salt, black pepper, red pepper flakes, and sugar. Mix well.

    Simmer the Sauce

    Bring the sauce to a gentle simmer. Reduce the heat to low and let it cook for about 15-20 minutes, stirring occasionally.

    Serve

    Once the sauce has thickened, remove it from the heat and serve it alongside the fried calamari.
