Burger Patty

Prepare the Patty Mixture
In a large bowl, combine the ground beef, salt, black pepper, and garlic powder. Mix gently until just combined. Do not overwork the meat.

Form the Patties
Divide the mixture into 4 equal portions and shape them into patties. Make a slight indentation in the center of each patty to prevent puffing during cooking.

Make the Jus
Add the beef broth, soy sauce, and fresh thyme to the saucepan. Bring to a simmer and let it cook for an additional 10 minutes, allowing the flavors to meld together. Adjust seasoning with salt and pepper to taste.

Toast the Buns
While the patties and jus are cooking, toast the burger buns on the grill or in a toaster until golden brown.

Assemble the Burger
On the bottom half of each toasted bun, place a handful of arugula, followed by the cooked patty with melted fontina cheese. Drizzle the mushroom jus over the patty, and top with crispy onions. Finish with the top half of the bun.
