Prepare the Calamari
Rinse the cleaned calamari under cold water and pat dry with paper towels. Cut the calamari into rings about 1/2 inch thick.

Make the Coating
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well to ensure an even distribution of the spices.

Soak in Buttermilk
Place the calamari rings in a separate bowl and pour the buttermilk over them. Allow them to soak for at least 30 minutes. This helps to tenderize the calamari.

Coat the Calamari
After soaking, remove the calamari from the buttermilk, letting the excess drip off. Dredge the rings in the flour mixture, ensuring they are thoroughly coated.

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.

Serve the crispy calamari immediately with the spicy aioli on the side.

Combine Ingredients
In a medium bowl, mix together the mayonnaise, minced garlic, Sriracha sauce, lemon juice, and a pinch of salt until well combined.

Adjust Seasoning
Taste the aioli and adjust the seasoning if needed, adding more Sriracha for heat or salt for flavor.

Cover the aioli and refrigerate for at least 15 minutes to allow the flavors to meld.
