Preparation for Cake

    Prepare the ramekins

    Preheat your oven to 425°F (220°C). Grease four 6-ounce ramekins with butter and dust with cocoa powder, tapping out the excess.

    Melt the chocolate and butter

    In a microwave-safe bowl, combine the dark chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until completely melted and smooth. Allow to cool slightly.

    Mix the sugar and eggs

    In a separate bowl, whisk together the granulated sugar, large eggs, and large egg yolks until well combined and slightly frothy.

    Combine mixtures

    Slowly add the melted chocolate mixture to the egg mixture while continuously whisking to prevent the eggs from cooking.

    Add dry ingredients

    Sift in the all-purpose flour and add the vanilla extract and salt. Gently fold the mixture until just combined. Do not overmix.

Baking the Lava Cakes

    Fill the ramekins

    Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

    Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, until the edges are firm but the centers are soft.

    Cool slightly

    Remove from the oven and let the cakes cool in the ramekins for 1 minute.

    Invert and serve

    Carefully run a knife around the edges of each ramekin, then invert onto dessert plates. Dust with powdered sugar and serve warm with a scoop of vanilla ice cream.
