Method
For the Calamari
- 1
Prepare the Squid
Rinse the cleaned squid under cold water and pat dry with paper towels. Slice into rings if not already done.
- 2
Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.
- 3
- 4
Bread the Squid
Dip each squid ring first into the flour mixture, shaking off excess, then into the beaten eggs, and finally into the breadcrumbs, ensuring they are well-coated.
- 5
Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 180°C (350°F). You can test the oil by dropping a small piece of bread into it; if it sizzles and browns quickly, the oil is ready.
- 6
Fry the Calamari
Fry the breaded squid rings in batches, being careful not to overcrowd the pot. Fry for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.
- 7
Serve
Serve the crispy calamari immediately while hot.
For the Spicy Aioli
- 8
Combine Ingredients
In a small bowl, mix together the mayonnaise, Sriracha sauce, lemon juice, minced garlic, and salt to taste. Stir until smooth and well combined.
- 9
Adjust Seasoning
Taste the aioli and adjust the seasoning with more Sriracha or salt if desired.
- 10
Chill
Refrigerate the spicy aioli for at least 15 minutes before serving to allow the flavors to meld.
