Preparation of Salad Base

    Prepare the Romaine

    Wash the romaine lettuce thoroughly under cold water. Pat dry with paper towels and chop into bite-sized pieces.

    Prepare the Croutons

    If using store-bought croutons, measure out 1 cup. For homemade, cube a few slices of bread, toss with olive oil, garlic powder, and bake at 375°F until golden and crispy.

Preparation of Dressing

    Make the Dressing

    In a bowl, mash the garlic and anchovy fillets together with a fork until smooth. Add the egg yolks, Dijon mustard, and lemon juice, whisking until combined. Slowly drizzle in the olive oil while whisking continuously until the dressing is thick and emulsified. Season with salt and black pepper to taste.

    Make the Parmesan Crisp

    Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Grate the parmesan cheese and sprinkle it in small circles on the parchment. Bake for 5-7 minutes or until the cheese is melted and golden. Let cool before removing.

    Assemble the Salad

    In a large salad bowl, combine the chopped romaine and croutons. Drizzle with the dressing and toss well to coat all the ingredients evenly.
