Bread Pudding

Toffee Sauce

Candied Pumpkin Seeds

Method

Bread Pudding

  1. 1

    Prepare the Bread

Preheat your oven to 350°F (175°C). In a large bowl, combine the cubed bread with the milk and heavy cream. Let it soak for about 15-20 minutes, stirring occasionally.

  2. 2

    Mix the Wet Ingredients

In another bowl, whisk together the granulated sugar, brown sugar, eggs, vanilla extract, cinnamon, nutmeg, and salt until well combined.

  3. 3

    Combine Ingredients

Once the bread has soaked, add the egg mixture to the bread mixture and stir gently until well combined.

  4. 4

    Bake the Pudding

Pour the mixture into a greased baking dish and bake in the preheated oven for 45-55 minutes, or until the pudding is set and the top is golden brown.

Toffee Sauce

  1. 5

    Prepare the Sauce

In a saucepan over medium heat, melt the butter. Once melted, stir in brown sugar and cook for about 2-3 minutes, until the sugar dissolves.

  2. 6

    Add Cream and Vanilla

Slowly whisk in the heavy cream and vanilla extract, stirring constantly until the sauce thickens slightly, about 5 minutes. Remove from heat.

Candied Pumpkin Seeds

  1. 7

    Prepare the Seeds

In a saucepan, combine pumpkin seeds, sugar, cinnamon, and water. Cook over medium heat, stirring constantly until the seeds are coated and the sugar is melted, about 5-7 minutes.

  2. 8

    Cool the Seeds

Spread the candied seeds onto a parchment-lined baking sheet and let them cool completely.
