Prepare the Marinade
In a mixing bowl, combine the Den miso paste, sake, mirin, and sugar. Whisk until smooth and well combined.
Marinate the Fish
Place the black cod fillets in a shallow dish and pour the marinade over the fish, ensuring it is well coated. Cover with plastic wrap and refrigerate for 3 to 4 days for best results.
Bake the Fish
Preheat your oven to 375°F (190°C). Remove the fish from the marinade and shake off any excess. Place the fillets on a lined baking sheet and bake for about 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
Finish with Salamander Broil
For added caramelization, switch your oven to broil. Broil the fish for an additional 2-3 minutes, keeping a close eye to prevent burning, until the top is nicely browned.
Serve
Remove the black cod from the oven and let it rest for a few minutes before serving. Enjoy your black cod miso with rice and steamed vegetables.
