    Prepare the Burger Patties

    In a large bowl, season the ground beef with salt and black pepper. Divide the beef into three equal portions and shape each into a 6 oz patty, making a slight indent in the center of each patty to prevent puffing during cooking.

    Cook the Bacon

    In a large skillet over medium heat, cook the bacon strips until they are crispy, about 5-7 minutes. Remove from the skillet and drain on paper towels.

    Cook the Burgers

    In the same skillet with the bacon grease, increase the heat to medium-high. Add the burger patties to the skillet and cook for about 4-5 minutes on one side. Flip the patties and place a slice of Weyauwega star cheddar cheese on each patty. Cook for another 4-5 minutes for medium doneness.

    Fry the Eggs

    In a separate non-stick skillet, crack the eggs and fry them sunny-side up or to your preferred doneness. Season with salt and pepper to taste.

    Assemble the Burgers

    Split the Sheboygan hard rolls and toast them lightly if desired. On the bottom half of each roll, place a burger patty with melted cheddar, a slice of crispy bacon, a fried egg, and a handful of crispy onion strings. Drizzle with gritty sauce before placing the top half of the roll.
