Cook the macaroni
Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Add cheese
Remove the sauce from heat and stir in the cheddar cheese and cream cheese until melted. Season with salt, black pepper, garlic powder, and onion powder.

Combine pasta and cheese sauce
Fold the cooked macaroni into the cheese sauce until fully coated.

Prepare the pork
Rub the pork shoulder with smoked paprika, salt, and black pepper. Place in a slow cooker.

Assemble the dish

Layer the mac & cheese
Preheat the oven to 350°F (175°C). Transfer the mac & cheese to a baking dish, then top with the shredded BBQ pork.

Prepare the biscuit dough
In a large bowl, whisk together flour, baking powder, baking soda, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the buttermilk until just combined.

Bake the biscuits
Turn the dough out onto a floured surface and gently knead a few times. Roll out to 1-inch thickness and cut with a biscuit cutter. Place on a baking sheet and bake at 450°F (232°C) for 12-15 minutes or until golden.
