Prepare the Falafel Patty Mixture

In a food processor, combine the walnuts, garbanzo beans, minced garlic, ground cumin, ground coriander, salt, and black pepper. Pulse until the mixture is coarsely blended but not completely smooth.

Add Binding Agent

Transfer the blended mixture to a mixing bowl and stir in chickpea flour until well combined. The mixture should be sticky enough to hold together; if it's too wet, add a little more chickpea flour.

Form the Patties

Using your hands, form the mixture into burger-sized patties, about 1/2 inch thick. You should get about 2-4 patties depending on size.

Cook the Patties

Heat olive oil in a skillet over medium heat. Once hot, add the patties and cook for 4-5 minutes on each side until golden brown and heated through.

Prepare the Buns

While the patties are cooking, lightly toast the vegan brioche buns in a separate pan or under a broiler until golden.

Assemble the Burger

Spread a generous amount of hummus on the bottom half of each toasted bun. Place the cooked falafel patty on top, followed by lettuce leaves and tomato slices. Top with the other half of the bun.
