Prepare and dry
Pat calamari rings and tentacles thoroughly dry with paper towels. Excess moisture prevents proper crisping.
Place calamari in a bowl, season with 1 tsp sea salt, 1/2 tsp black pepper, and 1 tbsp fresh lemon juice. Toss to coat and let sit 5–10 minutes while you prepare the breading. Dry again briefly before dredging if any liquid accumulates.

Make dry mix
In a shallow bowl or wide dish combine 1.5 cups all-purpose flour, 1/4 cup cornstarch, 1/4 cup semolina (if using), 1/2 tsp baking powder, 1 tsp paprika, 1/2 tsp garlic powder, 1/4 tsp onion powder and 1/8 tsp cayenne. Whisk thoroughly to evenly distribute spices and the baking powder.
Prepare wet batter (optional)
In a separate small bowl lightly beat 1 large egg, then whisk together with 3/4 cup very cold sparkling water or club soda until the mixture is smooth. Keep this chilled until ready to use — the carbonation helps create a light, crispy crust.
Two coating options: For a light, puffy batter: dip seasoned calamari into the wet batter, then into the dry mix once briefly and shake off excess. For a crisp dredge: skip the wet batter and simply toss calamari in the separate seasoned flour (0.5 cup flour + 1/2 tsp salt + 1/4 tsp pepper) until evenly coated, then press into the dry mix for extra crunch. Ensure all calamari pieces are evenly coated and let rest 2–3 minutes to adhere.
Frying
Heat oil
Pour neutral oil into a deep, heavy-bottomed pot or deep fryer to a depth of about 2–3 inches (roughly 3–4 cups depending on vessel). Heat oil to 350–360°F (175–182°C). If you don't have a thermometer, test with a small breadcrumb: it should sizzle and brown in about 30–40 seconds.
Fry in batches
Working in small batches (do not overcrowd the pot), carefully add coated calamari to the hot oil using a slotted spoon or spider. Fry rings and tentacles 1.5–2.5 minutes per batch until golden brown and crisp. Turn pieces gently if needed for even color. Overcooking more than 3 minutes risks toughness.
Drain and season
Remove fried calamari with a slotted spoon to a wire rack set over a baking sheet or paper towels. Immediately sprinkle lightly with a pinch of additional salt while still hot. Allow oil to return to temperature between batches (about 30–60 seconds) and repeat until all calamari is cooked.
Sauce & Finish
Transfer fried calamari to a serving platter. Sprinkle with 2 tbsp chopped fresh parsley and arrange lemon wedges alongside.
Serve hot with marinara and/or aioli for dipping. Recommend 1–2 tablespoons of sauce per person; adjust to taste.
