Sushi Rice
Rinse and cook rice
Place 2 cups short-grain sushi rice in a fine-mesh sieve and rinse under cold running water, stirring with your hand, until the water runs mostly clear (about 2–3 minutes). Drain. Transfer rice to a rice cooker or a medium saucepan. Add 240 ml water. If using a rice cooker, cook according to manufacturer instructions. If using a saucepan, cover, bring to a boil over medium-high heat, then reduce to low and simmer for 12–15 minutes without lifting the lid. Remove from heat and let rest, covered, 10 minutes.
Season the rice
While rice rests, combine 60 ml rice vinegar, 2 tbs sugar, and 1 tsp salt in a small saucepan. Warm gently over low heat, stirring until sugar and salt dissolve; do not boil. Transfer cooked rice to a large shallow nonreactive bowl (wood or wide plastic is traditional). Pour the vinegar mixture evenly over rice. Using a rice paddle or wooden spoon, cut and fold the rice gently while fanning the rice (or using a piece of cardboard) to cool it to near room temperature and give it a glossy finish. Cover with a damp towel to keep moist. Rice should be sticky but not mushy and slightly warm or room temperature when assembling.

Prepare the crab
If using imitation crab sticks, shred them with your hands into bite-sized strips. If using cooked real crab, pick and shred meat into strips. Toss the crab with 2 tbs mayonnaise in a small bowl to lightly coat; this is your crab salad filling. Adjust mayo to taste.
Prepare the vegetables
Peel, pit, and slice the avocado into long, even slices about 1/4-inch thick. If you like, toss avocado slices very lightly with a teaspoon of rice vinegar or a pinch of salt to help prevent browning. Cut the cucumber into thin matchsticks, removing seeds if necessary so the cucumber doesn't add excess moisture.
Toast sesame seeds (optional)
In a small dry skillet over medium heat, toast 2 tbs sesame seeds, shaking the pan frequently, until fragrant and lightly golden, about 2–3 minutes. Remove from pan and cool.
Assembly
Prepare mat and nori (for inside-out uramaki style)
Wrap the bamboo mat in plastic wrap to prevent rice sticking. Lay one full nori sheet shiny side down on the plastic-wrapped mat. Wet your fingers in the water-vinegar mixture to prevent sticking. With wet hands, take about 1 1/2 cups of seasoned sushi rice and evenly spread it over the nori in a thin layer covering the entire sheet. Pat the rice gently and make sure there are no big air pockets. Sprinkle toasted sesame seeds or masago/tobiko evenly over the rice if you want the rice exterior to be decorated.
Flip nori for inside-out roll
Carefully place another piece of plastic wrap over the rice-covered nori, then flip the mat so the rice is facing down and the nori is facing up on the plastic. Peel off the top plastic wrap to expose the nori (this creates an inside-out roll with rice on the outside).
Add fillings and roll
On the nori (now facing up), arrange a line across the center of the sheet: 1/3 of the crab salad (about 1/3 cup), several avocado slices (about 4–6 slices), and cucumber matchsticks (about a small handful). Starting from the edge closest to you, lift the bamboo mat and roll away from you, tucking the filling tightly while applying gentle even pressure. Roll until the seam closes. Use the mat to shape the roll into a firm cylinder, but avoid compressing the rice into mush.
Seal and trim
If the roll edge doesn't stick, wet the edge of the nori lightly with the water-vinegar mixture and finish rolling to seal. Using a very sharp knife dipped in water (and wiped dry between cuts), trim the ends of the roll to make neat edges. Slice the roll into 6–8 equal pieces by cutting with a gentle saw motion; for clean cuts dip the knife in water between each slice and wipe with a damp towel if rice builds up.
Alternate traditional maki method (nori outside)
If you prefer classic maki with nori on the outside, place a nori sheet shiny-side down on the mat, spread a thinner layer of rice covering about 3/4 of the sheet leaving the top edge clear, flip the sheet so rice is facing you or leave as-is and place fillings on the rice-less side, then roll in the same manner to form a nori-out roll. Adjust sesame/toppings accordingly.
To Serve
Plate and garnish
Arrange sliced California roll pieces on a platter. Garnish with extra sesame seeds or a small spoonful of masago/tobiko on top of each piece if using. Serve immediately with soy sauce, pickled ginger, and wasabi on the side.
Storage and leftovers
Sushi is best eaten fresh. If you must store, wrap tightly in plastic wrap and refrigerate for up to 24 hours. Note that avocado may discolor and rice texture will change; avoid freezing.
