Pork Marinade Preparation

Marinate the Pork
In a large bowl, combine olive oil, apple cider vinegar, brown sugar, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper. Mix well until the sugar dissolves.

Prepare the Pork
Add the pork shoulder to the marinade, ensuring it is fully coated. Cover the bowl with plastic wrap and refrigerate for at least 8 hours, preferably overnight for better flavor.
Smoking the Pork

Preheat the Smoker
Prepare your smoker by preheating it to 225°F (107°C) using your choice of wood chips (hickory or apple wood works well).

Smoke the Pork
Remove the pork from the marinade and let excess marinade drip off. Place the pork in the smoker and smoke for about 8-10 hours, or until the internal temperature reaches 190°F (88°C).

Rest the Pork
Once cooked, remove the pork from the smoker and let it rest for at least 30 minutes before shredding.

Make the BBQ Sauce
In a saucepan over medium heat, combine ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, and black pepper. Stir well and bring to a simmer.

Simmer the Sauce
Reduce heat and let the sauce simmer for 15-20 minutes, stirring occasionally until it thickens slightly.
