Chicken Preparation
- 1
Marinate the Chicken
In a large bowl, combine buttermilk, garlic powder, salt, black pepper, and paprika. Add the chicken breasts and ensure they are fully submerged. Cover and refrigerate for at least 1 hour, preferably overnight.
- 2
Prepare the Chicken for Frying
After marinating, remove the chicken from the buttermilk and let excess liquid drip off. Set up a breading station with flour, beaten eggs, and breadcrumbs seasoned with salt and pepper.
Pasta Cooking
- 3
Cook the Pasta
In a large pot of boiling salted water, cook the penne pasta according to package instructions until al dente. Drain and set aside. Toss with fresh basil once cooled.
Frying Chicken
- 4
Fry the Chicken
Heat vegetable oil in a large skillet over medium-high heat. Dredge each marinated chicken breast in flour, dip in beaten eggs, and coat with breadcrumbs. Fry for about 5-7 minutes on each side or until golden brown and cooked through. Remove and place on a paper towel-lined plate to drain.
Sauce Preparation
- 5
Make the Oregano-Citrus Cream Sauce
In a saucepan over medium heat, combine heavy cream, fresh oregano, lemon juice, orange juice, salt, and black pepper. Stir well and let simmer for about 5-7 minutes until slightly thickened.
Assembly
- 6
Combine Everything
In a large serving dish, layer the cooked penne pasta topped with fried chicken. Drizzle the oregano-citrus cream sauce over the top and garnish with additional fresh basil, if desired.
