Crust

Method

Crust Preparation

  1. 1

    Prepare the Crust

In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and the mixture resembles wet sand.

  2. 2

    Press the Crust

Press the mixture into the bottom of a 9-inch springform pan. Make sure it is evenly distributed and compacted. Bake in a preheated oven at 350°F (175°C) for 10 minutes. Remove from the oven and let cool.

Filling Preparation

  1. 3

    Mix the Filling

In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the granulated sugar and mix until well combined.

  2. 4

    Add Vanilla and Eggs

Add the vanilla extract and beat in the eggs one at a time, mixing well after each addition. Make sure the mixture is smooth and creamy.

  3. 5

    Incorporate Sour Cream

Mix in the sour cream until fully incorporated. Scrape down the sides of the bowl to ensure everything is combined.

  4. 6

    Bake the Filling

Pour the filling over the cooled crust in the springform pan. Bake in the oven at 350°F (175°C) for 45-50 minutes, or until the center is set and only slightly jiggly.

  5. 7

    Cool the Cheesecake

Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour. Then refrigerate for at least 4 hours or overnight.

Topping Preparation

  1. 8

    Prepare the Strawberries

In a bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Toss gently to coat the strawberries in the sugar and lemon juice.

  2. 9

    Let the Topping Sit

Let the strawberry mixture sit for about 15-20 minutes to allow the juices to release and create a syrup.

  3. 10

    Serve the Cheesecake

Once the cheesecake has chilled, remove it from the springform pan. Top with the strawberry mixture just before serving.
