Prepare the Corn
If using fresh corn, remove the husks and silks from the corn cobs, then cut the kernels off the cob. If using frozen corn, measure out 4 cups and set aside.

Chop Vegetables
Dice the roasted red peppers into small pieces, chop the onion finely, and mince the garlic cloves.

Prepare Thyme
Remove the fresh thyme leaves from the stems, discarding the stems.

Sauté the Onions and Garlic
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes, until it becomes translucent. Add the minced garlic and sauté for an additional 1-2 minutes, until fragrant.

Add Corn and Peppers
Stir in the corn kernels and diced roasted red peppers. Cook for 5-7 minutes, stirring occasionally, until the corn is heated through and starts to caramelize slightly.

Finish with Thyme and Season
Add the fresh thyme leaves, salt, and black pepper to taste. Stir well to combine and cook for an additional minute to allow the flavors to meld.
