Mousse Preparation

    Cook the Carrots

    Peel and chop the carrots into small pieces. In a pot, boil enough water to cover the carrots. Add the chopped carrots and cook until tender, about 15-20 minutes. Drain and let cool.

    Blend the Carrots

    Once cooled, transfer the carrots to a blender or food processor. Blend until smooth, adding a little water if necessary to achieve a silky consistency.

    Prepare the Mousse Mixture

    In a large mixing bowl, cream the unsalted butter with granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the pureed carrots, vanilla extract, and a pinch of salt until fully combined.

    Chill the Mousse

    Transfer the mousse mixture to serving cups or a large bowl. Cover with plastic wrap and refrigerate for at least 2 hours to set.

Whipped Cream Preparation

    Whip the Cream

    In a chilled mixing bowl, pour the heavy cream. Using an electric mixer, whip the cream on medium speed until it starts to thicken. Gradually add powdered sugar and vanilla extract, then continue to whip until soft peaks form.

    Serve

    Once the mousse has set, top each serving with a dollop of whipped cream before serving. Optionally, garnish with grated carrots or a sprinkle of cinnamon for an extra touch.
