Prepare Lobster Filling

    Chop lobster

    If using whole cooked lobster tails or claws, remove shell and chop meat into roughly 1/2-inch pieces to yield about 1 cup. Pat lightly with paper towel to remove excess moisture.

    In a medium bowl, combine mayonnaise, finely diced celery, chopped green onion, lemon juice, Dijon mustard, minced chives, and hot sauce (if using). Whisk until smooth and well combined.

    Fold the chopped lobster gently into the dressing mixture until evenly coated. Season with salt and freshly ground black pepper. Taste and adjust lemon, salt, or hot sauce as needed. Cover and refrigerate for 15–30 minutes to let flavors meld (can be made up to 4 hours ahead).

Prepare Shells

    Preheat oven to 350°F (175°C). Arrange mini phyllo shells (or wonton cups/vol-au-vents) on a baking sheet lined with parchment.

    Brush each shell lightly with melted butter to help crisp and flavor the shell. Sprinkle a pinch (about 1/4 teaspoon spread across all shells) of grated Parmesan into each shell to add savory depth and help create a slight glue for the filling.

    Bake shells for 6–8 minutes, until golden and crisp. Remove from oven and let cool on the sheet for 5 minutes.

Assemble & Finish

    Spoon about 1 rounded tablespoon of the chilled lobster mixture into each cooled shell. If you prefer slightly warmer bites, fill immediately after shells are warm but not hot—do not overheat the lobster mixture or it will toughen.

    Top each bite with a small pinch of microgreens or baby arugula, a dusting of lemon zest, and a light sprinkle of smoked paprika for color and a faint smoky note. Finish with a tiny sprinkle of chopped fresh parsley for brightness.
