    Prepare filling

    Gently pick through lump crab meat to remove any shells or cartilage; transfer to a medium bowl and keep pieces large where possible for texture.

    In a small bowl, whisk together mayonnaise, Dijon mustard, lemon juice, Worcestershire sauce, Old Bay, salt and pepper until smooth.

    Fold the dressing into the crab meat along with the finely chopped celery and green onion. Mix gently until combined — avoid overworking to keep lumps intact. Taste and adjust seasoning (add a touch more lemon or salt if needed). Cover and refrigerate while you make the shells (about 15–20 minutes).

    Make batter

    In a medium bowl whisk together flour, cornstarch, baking powder and kosher salt until evenly combined. Make a well in the center.

    Add the lightly beaten egg and most of the cold sparkling water to the flour mixture. Whisk gently until a smooth, slightly thick batter forms. Add remaining sparkling water if needed to reach a consistency that coats the back of a spoon but still flows (thin pancake-batter consistency). Chill the batter in the fridge for 10 minutes — this helps create a crisper shell when fried.

    Heat oil

    Pour vegetable oil into a heavy-bottomed skillet or pot to a depth of about 1 to 1.5 inches (enough for shallow-deep frying). Heat over medium-high until oil reaches 350°F (175°C) on a thermometer. If you don't have a thermometer, test with a drop of batter: it should sizzle and float immediately without burning.

    Working in small batches, spoon about 2 to 3 tablespoons of batter into the hot oil and use the back of the spoon to spread it slightly into a thin oval or round shape (about 3–4 inches across). Fry 2–3 at a time, depending on pan size, to avoid crowding.

    Fry shells 1.5–2 minutes per side, or until golden brown and crisp. Turn carefully with tongs or a slotted spatula. Adjust heat as needed to keep oil between 325–350°F (hot enough to crisp but not burn). Transfer finished shells to a wire rack set over a baking sheet or paper towels to drain. If shells soften slightly as they cool, re-crisp in a 350°F (175°C) oven for 3–4 minutes before assembling.

Assembly & to serve

    Allow shells to cool for 1–2 minutes until handleable but still warm. Spoon about 2 to 3 tablespoons of the chilled crab filling onto each shell, gently shaping the filling to sit on top without overloading (the shell should remain crisp).

    Garnish each filled shell with a small sprinkle of chopped parsley and a few drops of hot sauce if using. Serve immediately with lemon wedges for squeezing over the crab.

    Leftovers: keep crab filling refrigerated in an airtight container up to 2 days. Re-crisp shells in a 300–325°F oven for 5–7 minutes before serving.
