Marinade & Shrimp

    Make the marinade

    In a medium bowl combine 3 tbs olive oil, 2 tbs lemon juice, 1 tbs soy sauce, 1 tsp honey, minced garlic, smoked paprika, ground cumin, red pepper flakes, kosher salt, and black pepper. Whisk until smooth and slightly emulsified.

    Add shrimp

    Place the peeled and deveined shrimp in the bowl with the marinade. Toss thoroughly to coat each shrimp. Cover and refrigerate for 15–30 minutes (no longer than 1 hour) to allow flavors to penetrate.

    Preheat grill

    While shrimp marinates, preheat an outdoor grill or grill pan to medium-high heat (about 400–450°F / 200–230°C). Oil the grates lightly or brush the grill pan with a little olive oil to prevent sticking.

    Grill the shrimp

    Thread shrimp onto skewers (2–3 shrimp per skewer) or place directly on the hot grill/grill pan. Grill for 2–3 minutes per side, until opaque and firm with light char marks. Avoid overcooking — total cook time should be about 4–6 minutes depending on shrimp size.

    Finish with butter

    During the last 30 seconds on the grill, brush the shrimp with the 1 tbs of unsalted butter to add gloss and richness. Remove shrimp from the grill and transfer to a warm plate.

    Garnish and serve

    Sprinkle the grilled shrimp with the chopped parsley and serve immediately with lemon wedges for squeezing. Adjust seasoning with extra salt or lemon to taste.
