    Bring bacon to room temperature

    Remove bacon from refrigerator and let sit on the counter for 10 minutes. This helps it cook more evenly.

    Prepare pan

    Place a large, cold heavy skillet (cast iron or stainless steel) on the stove. Arrange the 8 bacon slices in a single layer with minimal overlap. If using particularly lean thick-cut bacon, add 1 tsp neutral oil and swirl it to coat the pan.

    Cook slowly

    Set heat to medium-low. Let bacon render its fat slowly, pressing gently with tongs if slices curl. Cook for 6–8 minutes on the first side until edges begin to brown and fat is translucent.

    Flip and continue cooking

    Flip each slice and continue cooking on medium-low for another 5–7 minutes, adjusting heat so the bacon crisps without burning. Total cook time should be about 11–15 minutes depending on thickness and desired crispness.

    Optional glaze (finish)

    If using maple syrup or honey, after flipping and when the bacon is nearly done (about 1 minute remaining), brush each slice lightly with 2 tbs maple syrup/honey and cook until glaze is set and caramelized — watch carefully to prevent burning.

    Transfer cooked bacon to a paper towel–lined plate or a wire rack set over a sheet tray to drain excess fat for 2 minutes. Sprinkle with black pepper to taste while hot, if desired.

    Reserve rendered fat (optional)

    Carefully pour strained bacon fat into a heatproof jar for later use in cooking (optional). Let pan cool before cleaning.
