Preparation
Prepare the Potatoes
Preheat your oven to 400°F (200°C). Toss the diced heirloom potatoes with olive oil, chopped rosemary, and salt. Spread them on a baking sheet and roast for 25-30 minutes until golden and tender.
Make Hush Puppies
In a bowl, mix cornmeal, flour, baking powder, and salt. In another bowl, whisk together milk, egg, and chopped onion. Combine the wet and dry ingredients until just mixed. Heat vegetable oil in a deep pan and drop spoonfuls of the mixture into the hot oil. Fry until golden brown, about 3-4 minutes per side. Drain on paper towels.
Cooking the Seafood
Season and Cook
In a bowl, combine shrimp and catfish fillets with cajun seasoning, salt, black pepper, garlic powder, and lemon juice. Heat a skillet over medium-high heat with a drizzle of olive oil. Cook the shrimp for 2-3 minutes until pink and opaque, and cook the catfish for about 4-5 minutes per side until golden and cooked through.
